mushrooms stuffed with blue cheese


gourmet stuffing mushrooms

1 tablespoon unsalted butter

4 ounces blue cheese

1 shallot, chopped

1/4 cup Panko and more for tops

black pepper

  • Preheat oven to 400 degrees
  • Clean mushrooms and take out stems
  • Heat butter in sauce pan, add chopped shallots
  • Add blue cheese and 1/4 cup Panko
  • Stir for a couple minutes
  • Fill mushrooms
  • Add Panko to mushroom tops
  • Bake for 15-20 minutes

Makes 6-8.
