buttermilk pancakes

This is the best recipe I have made. There is no going back.

Ingredients:

1 cup fresh blueberries or chopped bananas & pecan chips (optional)

2 cups flour

1/4 cup sugar sugar

2 1/4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs

2 cups buttermilk

1/4 cup melted butter ( unsalted or regular)and more for frying

  • In a mixing bowl sift flour, sugar, baking powder, baking soda and salt
  • In another mixing bowl, beat the eggs with the buttermilk and melted butter
  • Mix ingredients of both bowls together into a lumpy batter. Do not over mix.
  • Heat electric griddle (non stick preferred) to 375 degrees
  • Rub butter onto griddle
  • Pour pancakes onto griddle
  • Add blueberries into each pancake or if making banana pancakes add walnuts and add bananas afterwards on top
  • Cook until bubbling (2-3 minutes on each side), flip and cook until golden ( may have to turn down slightly)
