blueberry or cherry crepes


1 1/2 cups milk, (maybe a touch more milk)

1 cup all purpose flour

2 eggs

1 tablespoon cooking oil

2 tablespoons raw sugar

1 tablespoon Pure vanilla extract (for blueberry crepes)

1 tablespoon Almond extract (for cherry crepes, vanilla will work if you do not have almond)

frozen unsweetened dark cherries or blueberries

  • Pour frozen fruit into large skillet, add sugar in the raw (to taste),. Sometimes the dark cherries do not need sugar.Turn on medium high, eventually turn down heat
  • Combine milk, eggs, flour, oil, extracts and sugar. Stir.
  • Heat a lightly oiled omelet skillet on medium
  • Spoon in 3 tablespoons batter, tilt skillet to spread batter, turn down heat
  • Cook until light brown
  • Repeat
  • In between crepes warm crepes in oven
  • Place open crepes onto plate, spoon in fruit, fold
