coconut rum french toast

Serve with pineapple rings on the side!


Firm Italian, white or English muffin bread sliced

2 tablespoons coconut rum

pinch of Kosher salt

1 to 1.5 tablespoons raw sugar

3 eggs beaten

sweetened coconut flakes (optional)

1 cup milk

  • Mix ingredients
  • Heat and grease griddle with oil
  • Submerge bread into egg mixture
  • Place bread on skillet, sprinkle a little more of the sugar onto each slice of bread
  • cook on each side until brown

Optional: Add coconut flakes before grilling.
