spinach and feta clafoutis

This is a different breakfast casserole from Closet Cooking. A really nice change from other breakfast casseroles.


1 tablespoon olive oil

1/2 onion diced

2 green onions, chopped

5 ounces baby spinach, cleaned and toughly chopped

1 tablespoon parsley, chopped

1 tablespoon dill, chopped

salt and pepper to taste

1 cup milk

3 eggs

2 tablespoons flour

1/2 cup crumbled feta

1 cup mozzarella


  • Heat oil in a pan
  • Add onion and saute until tender about 5 minutes
  • Add green onion and spinach and saute until spinach wilts
  • Remove from heat and mix in dill and parsley and season with salt and pepper
  • Pour spinach mixture into shallow 6 cup baking dish
  • Mix milk, eggs and flour in food processor and pour on top of spinach
  • Sprinkle feta and mozzarella on top
  • Bake in a preheated 350 oven until puffed and golden brown on top about 20-30 minutes
