sweet potato hash


2 sweet potatoes, peeled and cubed

1/2 jalapeno

feta cheese

1/2 sweet yellow onion, chopped

2 chicken apple sausages, chopped into chunks (these are usually precooked)

1/2 teaspoon fresh thyme

cracked black pepper, to taste

Kosher salt, to taste

1 teaspoon honey

1 tablespoon olive oil


  • Boil sweet potatoes in boiling water for 4 minutes
  • Add olive oil to large skillet on medium high heat
  • Add onions and pepper to pan, saute’ for about 5 minutes until soft
  • Add sausage, sweet potatoes, thyme, salt, pepper and honey to skillet
  • Cook for another 5 minutes
  • Crumble feta over the top and serve immediately
