apple cider chicken

A nice hearty, yet elegant dinner. Perfect for the Fall.

Serves 2-3.


2-4 thinly sliced chicken breast halves

4 shallots, chopped

salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh thyme

1 tablespoon butter


1 cup apple cider


  • dredge chicken in flour
  • add butter and olive oil to pan
  • on medium heat, add shallots to pan, cook for 2-3 minutes until a little brown
  • add chicken to pan and brown
  • add thyme, salt and pepper
  • add 1 cup apple cider to pan, turn heat to high for 3-4 minutes to reduce liquid. Turn heat back to medium to simmer.
  • After chicken is cooked through, remove chicken
  • Stir sauce and add to each chicken breast on plate
