apricot brandy pork medallions

This is a simple, elegant and delicious way to serve pork. Forget about grilling! This is better.


1 pork tenderloin

3/4 cup apricot brandy

Kosher or sea salt

black pepper

3 shallots, chopped

olive oil


  • Add olive oil to skillet
  • Add chopped shallots and sauté for a minute
  • Slice pork into medallions and season with salt and pepper
  • Add pork to pan and brown on each side
  • Add brandy to skillet and cook on medium for a few minutes
  • Increase heat to high (this combined with the shallots will caramelize pork)
  • Turn back down to low and continue cooking until pork is done

Serve with potatoes and green beans
