old fashioned spare ribs with kraut

This recipe was passed on to me by a family member.


3 lbs pork spareribs (try Hormel)

1 11 oz. can of sauerkraut

1 cup finely chopped Granny Smith apple

1 cup shredded carrot

1.5 cups tomato juice

2 tbs. brown sugar

2 tsp. caraway seeds

  • In a large mixing bowl, combine ingredients, except ribs
  • Place spare ribs in a large pot and brown well
  • Combine kraut including liquid and all ingredients
  • Spoon over the ribs
  • Simmer covered 1 hour and 45 minutes until ribs are done
  • Baste with juices several times during last hour

Serve with crusty bread and a beer
