steakhouse steaks

The best way to make s steak. Courtesy of Ina Garten.  I adjusted slightly.


2 filet mignons

2 tablespoons vegetable oil

1 tablespoons fleur de sel ( I thought this was too salty, I used Kosher salt)

cracked pepper

2 tablespoons unsalted butter at room temperature


  • Preheat oven to 400 degrees
  • Heat a large cast iron skillet over high heat until very hot, about 5-7 minutes
  • Pat the steaks dry and brush lightly with oil, rub them with salt and pepper
  • When the skillet is ready add the steaks and sear them evenly on all sides for 2 minutes per side, for a total of 10 minutes
  • Top each steak with butter and place skillet in the oven
  • Cook steaks until they reach 120 degrees for rare,  or 125 for medium rare. NOTE: steaks continue to cook outside of the oven,
  • Cover tightly with foil for 10 minutes
