broccoli salad

There are many versions of this salad. This is my version.


2 heads of fresh broccoli ( only use the crowns)

1/4 lb of bacon or turkey bacon

1/4 red onion, chopped

1/2 cup sliced almonds or pecan chips

1/2 cup craisins

2 ounces or a little more to taste, good, crumbly blue cheese (Optional)

1/2 cup mayo (maybe an 1/8 more later)

1 tablespoon cider vinegar

1/8 cup white sugar

  • Cook bacon, cool and crumble.
  • Cut the broccoli crowns into bite size pieces. Combine with the chopped onion, bacon, blue cheese and craisins. Mix well.
  • Mix mayo, sugar and vinegar together until smooth. Stir into salad, chill and serve. You may need more dressing. If so add, 1/8 cup mayo a little sugar and a little vinegar.

Vegan? Omit the blue cheese and use vegan mayo and veggie bacon.
