pearl couscous salad with key lime dressing

A great salad for the holidays! Colorful and tropical.


2 cups dry pearl or Israeli couscous, cook according to directions

1 avocado, peeled and chopped

2 tablespoons fresh mint, chopped

2 small clementines, sectioned ( pith can stay on or be removed)

1/2 medium red onion, sliced

seeds from 1 pomegranate

2  tablespoons pine nuts


1/2 cup olive oil

1/8 cup or 2 tablespoons rice vinegar

1 teaspoon honey

pinch white pepper (black will do)

juice of 3 very small key limes or substitute 1/2-3/4 juice of one large lime


  • Cook couscous according to directions
  • Mix dressing
  • add all ingredients to couscous, add dressing and lightly toss
