easy weeknight crispy cod


fresh cod

1/2 cup whole wheat panko

Kosher salt


zest of one lemon

dried parsley flakes


Old Bay Seasoning

2 tablespoons butter


  • Preheat oven to 350 degrees
  • Add cod to foil lined baking sheet and brush mayo on each piece
  • Melt 2 tablespoons butter into pan and turn off the heat
  • Add Panko, zest of one lemon, Old Bay Seasoning (to taste), a little pepper and parsley flakes
  • Add mixture to each fillet, top off with a touch of salt and lemon juice
  • Bake for about 15 minutes or until fish is white and flakey
