turkey black bean chili


6 tomatoes (cooked)

1 small onion, chopped

2 cloves garlic, minced

chili powder to taste ( at least 2 tbs)

cumin to taste ( about 1 tsp)

Raw sugar (2 packets)

kosher salt to taste

1 bay leaf

1/2 bottle of Budweiser (6-8 oz.depending on how thick you like chili)

2  pounds ground dark meat turkey

2 cans low sodium Progresso black beans

1 small can of tomato paste

vegetable oil

1 tsp. cinnamon

jiffy corn muffin mix

If you would like spicier chili, add a little cayenne pepper

  • Boil tomatoes on medium until skin cracks
  • Cool tomatoes and peel away skins
  • Puree 3 tomatoes and chop other 3 into small chunks
  • Mince garlic
  • Chop onion
  • Brown turkey and drain
  • Add a small amount of oil in bottom of a large stock pot
  • Add onions and garlic
  • Add meat
  • Add all other ingredients
  • Add beer
  • Add cinnamon
  • Bring to a boil and simmer for an hour or longer
  • Prepare and bake corn muffins according to package
  • When serving chili, crumble up one muffin into each bowl
