Armenian rice pilaf

This is a family tradition and is a great side to many main dishes. You can also use as a main dish. Mix with grilled vegetables!


1 cup Uncle Ben’s converted rice

16 ounces chicken broth or veggie broth

vermicelli or angel hair

1/2 stick of butter

  • Melt butter in a pan or pot
  • Break up vermicelli and brown in the butter
  • Add broth and rice
  • Bring to a boil
  • Simmer for 20 minutes (do not lift the lid)
  • Serve

Other options, use orzo instead of vermicelli. If you are vegan use veggie broth and soy margarine.
