tortiglioni with vodka sauce

This is a perfect dish for all seasons. Enjoy with a green salad and a nice glass of Cabernet.


1 (16 oz) box tortiglioni or cavatappi pasta

2 tablespoons olive oil

1 (8 oz.) package mushrooms (sliced)

2 cloves garlic minced

3 shallots chopped

1 28 oz. can plum tomatoes ( smashed)

1/2 cup vodka

1/2 cup grated Parmesan cheese

8 oz. Italian cheese mix

kosher salt

6 basil leaves, chopped

4 tablespoons butter

2 tablespoons heavy cream


  • saute shallots, garlic and mushrooms in olive oil for 3-4 minutes on medium to medium high
  • prepare pasta to al dente
  • add tomatoes and juices to pan with chopped basil
  • simmer for 20 minutes
  • add cream and remove from heat
  • drain pasta and mix in Parmesan cheese, butter, vodka and salt to taste
  • add tomato mixture
  • pour into a baking dish and sprinkle Italian cheese mix on top
  • place dish under broiler for about 5-8 minutes or until brown and bubbly
