pesto sauce

This was the best thing in the world, especially with homemade fettuccine.


1/2 cup pine nuts

1/2 cup shelled pistachios

2 cloves garlic

1 teaspoon Kosher salt

1/4 teaspoon pepper

a couple pinches red pepper flakes

2-2.5 ounces fresh basil

3/4 cup extra virgin olive oil

1/4 cup melted butter

pinch of raw sugar

1/2 cup good Parmesan cheese (grate it yourself)


Add nuts, Parmesan, garlic, salt, pepper, sugar, red pepper flakes, olive oil and butter to food processor or blender. Blend on high for about 30 seconds. While blender is still running, add basil leaves and continue to blend until finely chopped and blended. Serve immediately. I like to warm it on the stove. If not using right away, store quickly in a plastic container, air tight. Refrigerate.
