quinoa with peanut sauce



2 cans whole water chestnuts, chopped

1 bunch green onions

sesame oil

low sodium soy sauce

Peanut Sauce

4 tablespoons creamy peanut butter

2 tablespoons dark brown sugar

1/4 teaspoon chili paste (optional)

1/2 teaspoon grated ginger (optional)

4 tablespoons soy sauce

1 clove garlic, minced

1/2 cup hot water

crushed peanuts for garnish

  • Cook quinoa as directed on bag
  • wash and chop green onions and water chestnuts
  • heat a teaspoon of sesame oil in a pan and stir fry water chestnuts, add a tablespoon of soy sauce
  • Mix everything together when quinoa is finished cooking

Peanut sauce

  • Add ingredients to a sauce pan, stirring constantly for about a minute. If too thick add a little more water.

Add sauce to quinoa and serve with crushed peanuts.
