roasted tomato and feta quinoa

Great for dinner or lunch, warm or cold!


3 cups cooked quinoa

3/4 of  packaged chunk of feta cheese

entire smallest container of pine nuts

handful of fresh chopped basil

handful of fresh, chopped, curly parsley

1.5 packs of cherry tomatoes

1/2 medium red onion, chopped

2 tablespoons olive oil

Kosher salt

  • Place tomatoes on baking sheet, add olive oil and kosher salt
  • Preheat oven to 450 degrees
  • Roast tomatoes for about 12-15 minutes
  • prepare quinoa as directed on package ( I made 2 servings)
  • When quinoa and tomatoes are done, mix in feta, pine nuts, onion, parsley, basil, salt and pepper


2/3 cup olive oil

1/3 cup  canola oil

1/4 cup red wine vinegar

pinch salt

pinch pepper

1/4 teaspoon garlic powder

sugar to taste

2 teaspoons dried oregano flakes

  • Mix all ingredients in a shaker. Dress to taste. You will not use all of it.
