small gourmet yellow potatoes (chopped small)

onion powder

garlic powder

Kosher salt

black peper

extra virgin olive oil

2 chopped shallots

  • Place chopped potatoes and shallots in a glass casserole dish.
  • Drizzle olive oil over potatoes and shallots and toss until coated.
  • Sprinkle garlic powder and onion powder over potatoes and toss again. Sprinkle with salt and freshly ground pepper.
  • Bake at 375 degrees for 45-50 minutes ( check for softness)
