small gourmet yellow potatoes (chopped small)
extra virgin olive oil
2 chopped shallots
- Place chopped potatoes and shallots in a glass casserole dish.
- Drizzle olive oil over potatoes and shallots and toss until coated.
- Sprinkle garlic powder and onion powder over potatoes and toss again. Sprinkle with salt and freshly ground pepper.
- Bake at 375 degrees for 45-50 minutes ( check for softness)
