simple fried rice

This is one of my favorite simple meals. Save your leftover rice. Cold rice should be used when making fried rice.


4 cups of cold rice


2 eggs


4-6 green onions, chopped

canned pineapple tidbits ( optional)

soy sauce


  • add oil to the pan
  • add rice and cook for  a few minutes
  • Make a well in the middle of the rice and add eggs
  • scramble eggs and then scramble incorporating the rice
  • add soy sauce to taste
  • fry for a few minutes, add green onions and pineapple
  • cook until a yellow brown color
  • season with more soy sauce and or salt and pepper
