sweet potato gnocchi with broccolini and browned butter


(2) 8 oz. sweet potatoes

2 cloves garlic chopped

1/2 teaspoon salt

1/8 teaspoon white pepper

1 bunch broccolini

3/4 stick butter

1/2 teaspoon ground nutmeg

1 egg

2 cups flour

Parmesan cheese



  • microwave potatoes for 20 minutes
  • potatoes should be mashed inside, scoop out middles and add to a mixing bowl
  • add salt, nutmeg and egg
  • mix in the flour a little at a time
  • bring a large pot of salted water to boil
  • on a floured surface, roll out dough and cut into long snakes, cut into 1 inch sections
  • drop the pieces into boiling water and allow them to cook until they float to the surface
  • remove from the water with a slotted spoon


  • Heat a skillet to medium-high and add butter
  • add chopped garlic and white pepper and cook for 1 minute
  • add broccolini and pine nuts and cook for one more minute
  • turn down heat to medium and cook until butter is slightly browned
  • Mix with gnocchi, Parmesan cheese and salt to taste
