veggie fajitas


1 container large mushrooms

1 red pepper

1 orange or yellow pepper

1 vidalia or sweet onion

1 yellow squash

1/2 teaspoon cayenne pepper

salt to taste

2 tablespoons canola oil ( more if needed)

1 lime

sour cream (optional)

1 avocado (optional)

1 jalapeno (optional)

1 package tortillas (fajita size, medium) *** Azteca is a good choice

  • Clean and slice mushrooms
  • Clean, remove seeds and slice peppers into strips
  • Slice onion into strips
  • Slice yellow squash into circles
  • Heat oil in skillet over medium-high, add all veggies, and jalapeno (cut into rings) if you would like
  • Sprinkle with kosher salt
  • Stir in cayenne pepper
  • Turn down heat to medium or medium low
  • Cook veggies until they are stir-fried to your perfection
  • Squeeze the juice of one lime into pan

Serve with avocado slices and broiled potatoes, sour cream or vegan sour cream if desired.
