This is a great, hearty meal with all food groups involved!
Ingredients:
1 box orzo
2 eggplants, peeled cut into circles
1-1.5 whole, boneless, skinless chicken breasts cooked and cut into small bite size pieces
6 ounces smoked Gouda cheese shredded
10 ounce box frozen spinach, thawed
Parmesan cheese shredded
Mozzarella cheese shredded
Italian bread crumbs
olive oil
Beaten egg
Kosher salt
- Preheat oven to 350 degrees
- Cook orzo per directions on box
- Dip eggplant in egg and coat with Italian breadcrumbs and fry in olive oil
- In a 13 x 9 casserole dish, spoon in marinara sauce
- Drain orzo and mix with spinach, chicken, gouda, and kosher salt
- Layer eggplant over marinara in dish, spoon in orzo mixture, add more sauce, keep layering until ingredients are gone, with eggplant on top
- Add Mozzarella and Parmesan covering the top
- Cook for 30 minutes, cheese should be a little brown
Serve with crusty bread and or a green salad
This can easily be vegetarian, just omit the chicken.
