Thai chicken

boneless, skinless chicken cut into strips

green onions (4-6)

1 clove garlic

1 red pepper cut into chunks

fresh basil leaves

carrots, shredded

grated ginger

peanuts roughly ground

peanut oil or sesame oil

  • Add peanut oil to pan with garlic, low heat
  • Add chicken to the pan, brown, turn up heat to medium high
  • Add basil, peppers, ginger and carrots
  • Add green onions
  • Cook until chicken is cooked through
  • Add sauce and ground peanuts

Peanut Sauce

4 tablespoons creamy peanut butter

2 tablespoons dark brown sugar

1/4 teaspoon chili paste (optional)

1/2 teaspoon grated ginger (optional)

4 tablespoons soy sauce

1 clove garlic, minced

1/2 cup hot water

crushed peanuts for garnish

  • Add ingredients to sauce pan and stir constantly for about a minute. If too thick, add more water.

Mix sauce into stir fry. Serve with jasmine rice.
