crunchy quinoa salad with honey dressing

Healthy and delicious!

Ingredients:

1 box Quinoa

3 large radishes, chopped very small

2 green onions, chopped

1/2 head Belgian endive, chopped

sliced almonds, (whatever looks like enough, you can add more)

golden raisins (same rule as above)

  • Cook quinoa as directed on package
  • chop vegetables
  • Mix everything together when quinoa is cooked

Dressing:

3/4 cup olive oil

1/4 cup apple cider vinegar

1/2 teaspoon curry powder

3 tablespoons honey

2 tablespoons water

salt and pepper to taste

  • Whisk ingredients
  • Pour 1/2 on salad to start ( you will not need all of this). Mix around and taste if you feel like more dressing is needed, add more.
  • Finish with a sprinkle of Kosher salt
