blueberry upside down pie

I thought of this recipe on a night where I wanted a great dessert but did not want to spend time on pie crust. This is not quite a crisp, cobbler, buckle or betty. It is different and delicious.

Ingredients;

3 cups fresh blueberries, washed

1/2 cup sugar

1/2 cup flour

1 tablespoon vanilla extract

2 cups crushed graham crackers, chopped finely in food chopper, bread crumb consistency

10 tablespoons butter

1/3 cup dark brown sugar

1 cup chopped pecans

Directions:

  • Preheat oven to 350 degrees
  • Mix blueberries, flour, sugar and vanilla in a large bowl
  • Pour mixture into a square, metal baking dish
  • Place blueberry mixture in oven for 25 minutes
  • Mix graham cracker crumbs and brown sugar
  • Melt butter in saucepan on low and turn off heat
  • Add graham cracker mixture and mix with butter
  • Remove blueberries from oven and add graham cracker mixture on top, mix in pecans
  • Bake 15 minutes
  • Cool for a couple minutes and serve
