buttermilk waffles with bananas, coconut and pecans

The perfect breakfast anytime.

Ingredients:

2 eggs

1  3/4 cups buttermilk ( make buttermilk by using 1 tablespoon white vinegar and then filling with milk to make 1 cup, let sit for a few minutes)

1 stick butter, melted and cooled to room temperature

1  1/2 cups flour

1/4 cup almond flour

2 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup toasted coconut

1 tablespoon Malibu rum

1 teaspoon vanilla

1/2 cup chopped pecans or pecan chips

2  bananas sliced

Directions:

  • Whisk eggs, buttermilk, melted butter, vanilla,and Malibu in a large bowl. In another bowl stir dry ingredients together. add to egg mixture and stir in 1 sliced banana, coconut and pecans. Stir until smooth and let rest briefly.
  • Heat a waffle iron to medium and lightly butter the iron. Use 1/4 cup to ladle batter into waffle iron until covered. Cook until medium and waffles are light to medium golden brown.
  • Serve with more banana slices
