Blueberry and feta bulgur salad with mint dressing

This is so fresh and delicious. Courtesy of Keith Schroeder and Cooking Light. I added slivered almonds.

Ingredients:

1 cup water

1 cup cracked bulgur wheat

3/4 cup chopped mint leaves

1/3 cup extra virgin olive oil

1.5 tablespoons fresh lemon juice

5/8 teaspoon Kosher salt and more to taste

1/2 teaspoon fresh ground pepper

1/4-1/3 cup slivered almonds

1.5 cups English cucumber, diced

1 1/4 cups blueberries

3/4 cup thinly chopped red onion

1/2 cup or 2-3 ounces crumbled feta cheese

Directions:

  • Bring 1 cup water to a boil in a small saucepan
  • Add bulgur and stir. Turn off heat and let sit covered for 25 minutes until all water is absorbed.
  • Place the mint, oil, lemon juice, salt and pepper in a food processor or blender until pureed.
  • Use fork to fluff bulgur
  • Add the dressing, cucumber, blueberries, onion and the feta. Toss to combine.
