coconut rice

This is my friend Andy’s recipe. Andy also makes a great cup of coffee (stove top) and a MEAN barbecue chicken!

Ingredients:

1 cup rice

1 cup water

1 cup coconut milk (canned)

1 tablespoon sugar

1/2 teaspoon salt

1/2 teaspoon saffron

  • Add everything to pot except saffron. Stir.
  • Sit for 1/2 hour (optional)
  • Sprinkle saffron on top
  • Turn heat to high, cover. Watch pot, as soon as it boils turn it down to very low.
  • Simmer for 20 minutes
  • Let sit for 5 or 10 minutes before serving
