Ingredients:
(2) 8 oz. sweet potatoes
2 cloves garlic chopped
1/2 teaspoon salt
1/8 teaspoon white pepper
1 bunch broccolini
3/4 stick butter
1/2 teaspoon ground nutmeg
1 egg
2 cups flour
Parmesan cheese
Directions:
Gnocchi
- microwave potatoes for 20 minutes
- potatoes should be mashed inside, scoop out middles and add to a mixing bowl
- add salt, nutmeg and egg
- mix in the flour a little at a time
- bring a large pot of salted water to boil
- on a floured surface, roll out dough and cut into long snakes, cut into 1 inch sections
- drop the pieces into boiling water and allow them to cook until they float to the surface
- remove from the water with a slotted spoon
Sauce
- Heat a skillet to medium-high and add butter
- add chopped garlic and white pepper and cook for 1 minute
- add broccolini and pine nuts and cook for one more minute
- turn down heat to medium and cook until butter is slightly browned
- Mix with gnocchi, Parmesan cheese and salt to taste
