Ingredients:
fresh cod
1/2 cup whole wheat panko
Kosher salt
pepper
zest of one lemon
dried parsley flakes
mayo
Old Bay Seasoning
2 tablespoons butter
Directions:
- Preheat oven to 350 degrees
- Add cod to foil lined baking sheet and brush mayo on each piece
- Melt 2 tablespoons butter into pan and turn off the heat
- Add Panko, zest of one lemon, Old Bay Seasoning (to taste), a little pepper and parsley flakes
- Add mixture to each fillet, top off with a touch of salt and lemon juice
- Bake for about 15 minutes or until fish is white and flakey
