rainbow trout with shallots and tarragon

Rainbow trout is my new favorite. It has a delicate taste yet substantial like salmon.

This is an easy, simple and delicious recipe. The best way to cook is in a cast iron pan,

Ingredients:

1 pound of rainbow trout (serves 2)

olive oil

1/2 tsp to 1 tsp dried or fresh tarragon

2 shallots

4 tablespoons balsamic vinegar

1 egg

plain bread crumbs

Kosher salt

Directions:

  • Heat olive oil in cast iron or skillet or frying pan
  • Dip fish in egg and dredge in bread crumbs, lightly salt
  • On medium heat, add fish to pan along with chopped shallots and sprinkle with 1/4 tsp to 1/2 tsp tarragon on both pieces of fish
  • Cook fish for 3-4 minutes and then flip, add 1/4 tsp to 1/2 tsp more tarragon and 4 tablespoons Balsamic vinegar
  • Cook fish for 3-4 minutes more
