buttermilk pancakes

This is the best recipe, fluffy, a little stretchy and lots of flavor!

Ingredients:

1 1/2 cup fresh blueberries or chopped bananas & pecan chips (optional)

2 cups flour

3 tablespoons malted milk powder

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1  large egg

2 cups buttermilk (real buttermilk, do not make, it will not taste the same).

3 tablespoons melted unsalted butter

vegetable oil

  • In a mixing bowl whisk flour, milk powder, sugar, baking powder, baking soda and salt
  • In another mixing bowl, beat the egg with the buttermilk and melted butter
  • Make a well in flour mixture and add buttermilk mixture, combine. It will be thick and lumps will remain. Fold in blueberries.
  • Heat electric griddle and rub oil onto griddle. Add a tablespoon cold butter to skillet. Scoop batter onto skillet with a 1/3 cup.
  • Cook until golden brown on both sides
  • Add extra blueberries or bananas on top
