This is a different breakfast casserole from Closet Cooking. A really nice change from other breakfast casseroles.
Ingredients:
1 tablespoon olive oil
1/2 onion diced
2 green onions, chopped
5 ounces baby spinach, cleaned and toughly chopped
1 tablespoon parsley, chopped
1 tablespoon dill, chopped
salt and pepper to taste
1 cup milk
3 eggs
2 tablespoons flour
1/2 cup crumbled feta
1 cup mozzarella
Directions:
- Heat oil in a pan
- Add onion and saute until tender about 5 minutes
- Add green onion and spinach and saute until spinach wilts
- Remove from heat and mix in dill and parsley and season with salt and pepper
- Pour spinach mixture into shallow 6 cup baking dish
- Mix milk, eggs and flour in food processor and pour on top of spinach
- Sprinkle feta and mozzarella on top
- Bake in a preheated 350 oven until puffed and golden brown on top about 20-30 minutes
