I thought of this recipe on a night where I wanted a great dessert but did not want to spend time on pie crust. This is not quite a crisp, cobbler, buckle or betty. It is different and delicious.
Ingredients;
3 cups fresh blueberries, washed
1/2 cup sugar
1/2 cup flour
1 tablespoon vanilla extract
2 cups crushed graham crackers, chopped finely in food chopper, bread crumb consistency
10 tablespoons butter
1/3 cup dark brown sugar
1 cup chopped pecans
Directions:
- Preheat oven to 350 degrees
- Mix blueberries, flour, sugar and vanilla in a large bowl
- Pour mixture into a square, metal baking dish
- Place blueberry mixture in oven for 25 minutes
- Mix graham cracker crumbs and brown sugar
- Melt butter in saucepan on low and turn off heat
- Add graham cracker mixture and mix with butter
- Remove blueberries from oven and add graham cracker mixture on top, mix in pecans
- Bake 15 minutes
- Cool for a couple minutes and serve
