Note: If using fresh blueberries, add a little lemon juice to make them more moist. This recipe is for one sheet of puffed pastry. If using two sheets, double recipe.
Ingredients:
1 cup fresh or frozen (thawed) blueberries
3 oz. cream cheese
1 tablespoon vanilla
1 tablespoon raw sugar
zest of one large lemon
1 teaspoon poppy seeds
1 sheet puffed pastry dough
- Thaw dough for 30-40 minutes
- Preheat oven to 400 degrees
- Soften cream cheese in microwave for 30-40 seconds
- In a bowl combine cream cheese and vanilla
- In another bowl, add blueberries, sugar, lemon zest and poppy seeds
- Add cream cheese mixture to blueberry mixture and stir
- Unfold sheet and cut each strip in half and then into 6 squares
- Add blueberry mixture to each square, fold over into a triangle or a rectangle, whichever you prefer
- Pinch ends to make sure blueberries stay inside
- Place on a cookie sheet
- Sprinkle a little sugar in the raw on top of each turnover
- Bake for 20-25 minutes (electric ovens cook quicker)
