grilled peach salad

Grilling the peaches brings out the sweetness by caramelizing. Delicious with a glass of Prosecco or Rose’.  This is all to taste. If you like more pine nuts, goat cheese or spinach, just add more.

Ingredients:

2 peaches

box of tri-colored rotini

crumbled goat cheese

small box pine nuts

baby spinach

sliced red onion

Directions:

  • slice peaches in half, remove pits
  • place on grill and grill until soft
  • cook pasta according to directions
  • drain pasta and cool
  • make dressing
  • mix spinach, pine nuts, goat cheese, peaches, red onions and pasta
  • add dressing

Poppy Seed Dressing Ingredients:

1/4 cup white wine vinegar

1/4 cup sugar

1 small shallot

1.5 tablespoons poppy seeds

salt to taste

1/2 teaspoon ground mustard

1/2 cup grapeseed or canola oil

Directions:

  • mince shallots
  • whisk vinegar and sugar until dissolved
  • add all ingredients except oil
  • while whisking, add oil slowly
  • add to salad
