Ingredients:
6 tomatoes (cooked)
1 small onion, chopped
2 cloves garlic, minced
chili powder to taste ( at least 2 tbs)
cumin to taste ( about 1 tsp)
Raw sugar (2 packets)
kosher salt to taste
1 bay leaf
1/2 bottle of Budweiser (6-8 oz.depending on how thick you like chili)
2 pounds ground dark meat turkey
2 cans low sodium Progresso black beans
1 small can of tomato paste
vegetable oil
1 tsp. cinnamon
jiffy corn muffin mix
If you would like spicier chili, add a little cayenne pepper
- Boil tomatoes on medium until skin cracks
- Cool tomatoes and peel away skins
- Puree 3 tomatoes and chop other 3 into small chunks
- Mince garlic
- Chop onion
- Brown turkey and drain
- Add a small amount of oil in bottom of a large stock pot
- Add onions and garlic
- Add meat
- Add all other ingredients
- Add beer
- Add cinnamon
- Bring to a boil and simmer for an hour or longer
- Prepare and bake corn muffins according to package
- When serving chili, crumble up one muffin into each bowl
