Ingredients:
1 butternut Squash (cooked, not real mushy)
salt
sweet or Spanish onion
Frank’s Red Hot
1 package Azteca 10 inch flour tortillas
- Scoop cooked squash out of skin (it should be soft, but not real mushy)
- Slice onion in rings very thin
- Heat griddle with oil and saute onions until brown and a little crispy (add salt)
- Remove onions from griddle
- Heat griddle with oil again
- Place 2 tortilla shells on griddle
- Spread butternut squash on shells
- Add onions and Frank’s Red Hot
- Place tortilla shells on top
- Cook until brown and a little crispy
Service with salad or soup.
