This is one of my favorite simple meals. Save your leftover rice. Cold rice should be used when making fried rice.
Ingredients:
4 cups of cold rice
salt
2 eggs
oil
4-6 green onions, chopped
canned pineapple tidbits ( optional)
soy sauce
Directions:
- add oil to the pan
- add rice and cook forĀ a few minutes
- Make a well in the middle of the rice and add eggs
- scramble eggs and then scramble incorporating the rice
- add soy sauce to taste
- fry for a few minutes, add green onions and pineapple
- cook until a yellow brown color
- season with more soy sauce and or salt and pepper
