Ingredients:
1 green pepper, sliced thin
1 red, yellow or orange pepper, sliced thin
1 medium onion (yellow or sweet), sliced thin
oil
Kosher salt
hot sauce
tortilla chips
sour cream (optional)
Cheese Sauce Ingredients:
1/2 lb. white American cheese
1/4-1/3 cup milk
1 tablespoon butter
1 4 oz. can green chili’s
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1 pinch of cayenne
Directions:
Add oil to large skillet. Add vegetables and cook over high and then medium heat. Add Kosher salt and hot sauce, cook until preference. Meanwhile, place cheese, milk and butter in a sauce pan over low heat. Heat until melted, stirring frequently. Stir in green chili’s, cumin, garlic powder and cayenne pepper. add more milk if you would like it thinner.
Add tortilla chips to each plate, spoon cheese over chips and add vegetables. Top with more hot sauce, jalapenos and sour cream if you would like.
